Why do we do what we love?

We believe that good food connects people and landscapes.

Our "why": Strengthening family businesses in Morocco's Oriental region, preserving traditional agriculture without pesticides – and demonstrating that fairly paid craftsmanship tastes better than industrial mass production.

At Marocculinair , people are our priority, not profits. We want to protect and preserve small, family-run olive groves in the Oriental region – with above-average pay, stable sales, and respect for their work. Traditional agriculture without pesticides and artificial fertilizers should remain because it protects health and the environment. Yes, we must make profits – but only as "fuel" to advance our dream of a fairer, more flavorful food world.

Very important: Our family stands behind Marocculinair – and we have a strong connection with the people of the Oriental region. This connection is more than just business: it means trust, long-standing relationships, and shared responsibility. We regularly visit the region, listen, learn from each other, and share opportunities and risks. This is precisely what creates fair enjoyment – and a partnership that benefits everyone.

How do we achieve high quality and sustainability?

Care, not haste: hand-picked olives, gentle processing, transparent relationships. We work directly with small groves, pay fair prices, and refrain from using pesticides and artificial fertilizers – for pure oil and a pristine environment.

Quality arises from collaboration. The fruit is carefully harvested by hand and gently cold-pressed to preserve flavor and nutrients. Fair, above-average wages make this way of working sustainable. In this way, we combine enjoyment, soil conservation, and social responsibility – transparently from tree to bottle.

We protect our Golden Oriental by orienting ourselves and our partners on the traditional knowledge of our region on the one hand – and by incorporating scientific findings on the other.

🌱 Cultivation & Harvesting – in harmony with nature


  • Our olives grow in the sun of eastern Morocco (Oujda region) , where olive trees have been cultivated for generations.

  • We harvest only directly from the tree – no ground fruit – and at the ideal stage of ripeness , when aroma and ingredients are at their peak.

  • The harvest is carried out gently: by hand or with light combs in airy crates , never in sacks. This ensures the fruit remains healthy and uncontaminated.

🧪 Oil extraction – modern methods for top quality


  • Our olives reach the oil mill within a few hours .

  • There, we rely on modern 2-phase decanters and processing at below 27 °C (“cold extracted”).

  • We ensure separate batch processing and strict hygiene so that each batch retains its authentic aroma.

  • Filtration removes residual water and fruit particles – this prevents fermentation defects and ensures the freshness of the oil for many months.

🚛 Transport & Storage – Maintaining Purity


  • We store the fresh oil in stainless steel tanks or – for short transports – in food-grade canisters , always cool (14–18 °C), dark and without contact with air.

  • This ensures that the valuable polyphenols , which are important for taste and health, are fully preserved.

What makes it so unique?

Micro-harvest , big idea: Our oil initially comes from a single, very small olive grove – the production is deliberately limited. We are gradually incorporating additional family groves and protecting them from industrial price pressure.

Our olive oil is a true gem: It originates from a single, very small grove in the Oriental region. The quantity is very limited – each bottle represents a terroir, a family, a season. Each year, we expand our network to include more small, family-run groves, paying them above-average prices and thus ensuring their independence from industrial companies. The result: an unadulterated, characterful oil with a clear origin – limited, honest, meaningful.

Simple questions deserve simple answers

Why are we sustainable? Because we understand sustainability holistically – ecologically, socially, and economically. Our raw materials are sourced using resource-conserving methods, with short transport routes and the lowest possible emissions along the entire supply chain. Cultivation takes place without chemical-synthetic pesticides, according to organic criteria and in Moroccan organic quality standards. Everyone in the value chain is treated equally: producers, processors, and retailers are treated with respect and receive fair compensation so that you, as a customer, receive a high-quality, exclusive product. In practice, we distribute the retail price of each bottle almost equally – roughly one-third each – between production, processing, and retail; however, the exact proportions may vary due to exchange rate fluctuations. Trust is the foundation of everything: We are just starting out and are convinced that this model will help shape a better future. Quality

The quality of our olive oil begins in the grove and doesn't end with bottling. Careful soil management and gentle pruning lay the foundation; harvesting takes place early in the ripening process, by hand and without crushing, so that the olives reach the mill within a few hours. There, the purely mechanical, temperature-controlled ("cold") extraction process takes place, with contact exclusively with stainless steel and as little air, light, and heat as possible. Depending on the batch, the oil is then filtered (for greater stability) or intentionally left naturally cloudy (for particularly intense aromas) – we clearly indicate this. Bottling is done in a low-oxygen environment, ideally after inert gas purging, in dark glass or bag-in-box containers to further protect the oil from light. At home, you can maintain the quality by storing it in a cool, dark place at around 14–17 °C, tightly closing the bottle immediately after each pour, and using smaller containers: A 5-liter canister may be cheaper, but with each opening, oxygen accelerates the aging process. With proper storage, extra virgin olive oil retains its high quality for up to 18 months; naturally cloudy oils should be used sooner. You can recognize a high-quality oil by its fresh aroma (e.g., of green grass, tomato vine, artichoke) and the harmonious interplay of fruitiness, bitterness, and a slight peppery note that scratches the throat – these polyphenol notes are a positive indicator of quality.

Important: Our olive oil is a natural product and therefore subject to natural variations depending on the vintage, weather, and variety. This is precisely what we want – not a uniform product , but authentic character with a recognizable origin. By purchasing smaller quantities, you contribute to quality assurance: less oxygen exposure, more freshness in your everyday life. We make every effort to positively influence quality along the entire value chain – from the grove to gentle processing and protected bottling.

Limited offer

Our offer is deliberately limited: 1,000 bottles of 0.5 liters each . We don't produce "any quantity" because our focus is consistently on quality – and on the quality of life for everyone involved. This begins with the producer, the olive grower and his team, who are paid fairly and treated with respect. It continues with the processor, a small, artisanal olive mill that invests time, care, and expertise instead of focusing on mass production. And it includes us at Marocculinair : We take care of reliable processing, transport, bottling, certification, external quality controls, and, of course, distribution – transparently and without shortcuts. Ultimately, it's about your quality of life: You receive a product that meets higher moral standards in every respect than legally required.

So why limit production? Because true fairness and meticulous craftsmanship cannot be scaled indefinitely . We are critical of how "extra virgin" olive oil can be offered in supermarkets for under €10 – even in large-scale industrial production, this seems difficult to reconcile with fair conditions. With fair wages for producers and their employees, the purchase price is often already higher than such retail prices. Our answer to this is clarity, not compromise: small, traceable quantities, uncompromising quality.

Looking ahead, we plan to carefully expand our offerings and include more small olive groves that share our values. Our guiding principle remains the same: people before profits – and quality before quantity.

Pre-order / Security


Our supply is limited (see "Limited Offer"). Olives are harvested only once a year during a very short period; consequently, there is only a small window in which fresh olive oil can be sold profitably from a quality perspective. While extra virgin olive oil generally has a shelf life of 12–18 months from bottling, the often unfavorable storage conditions in supermarkets (temperature, light) frequently cause the quality to deteriorate prematurely. Because we are committed to quality, we therefore offer each batch of our Golden Orient olive oil for only three months – quality over quantity. To ensure you are supplied next year, pre-orders are possible. The final price can only be determined at harvest time and is expected to be slightly higher compared to the 2025 offer. This prevents producers from being unintentionally disadvantaged if the producer price per liter rises; should it fall, your pre-order will have been a worthwhile investment. You don't need to worry about your prepayment: If the olive oil cannot be produced or if the delivery does not arrive by January 31st of the year following your order/pre-order, we will of course refund the amount. Regardless, your statutory right of withdrawal of 14 days after delivery applies – without giving any reason.
